Information on the Western Cuisine Preparatory Course
and Trade Test, Academic Year 2011/12
Western Cuisine Trade Test
In collaboration with the German Culinary and Restaurant Academy of the German Chamber of Industry and Commerce Koblenz Germany, the Centre provides relevant courses and examinations for chefs in Hong Kong to undergo trade tests in western cuisine. The "Trade Test System in Western Cuisine" is designed to enhance the technical skills and knowledge of professional chefs. The system consists of 3 levels, namely "Certified Cook", "Trainer Chef", and "Master Chef". As students’ progress through the system, the course contents include a widening focus on management knowledge and skills. Certificates issued by the HITDC are also endorsed by the Director of the German Chamber of Industry and Commerce Koblenz, Germany. This professional qualification is recognized by all European Union countries.
Preparatory Course for Certified Cook:
The Preparatory Course for Certified Cook will commence on 9 January 2012 and will continue until 18 June 2012. Classes will be held every Monday afternoon from 3:00 pm to 6:00 pm. The duration of the course is 60 hours. The course fee is HK$ 8,280.00

Preparatory Workshop and Trade Test for Certified Cook:
The Preparatory Workshop for Certified Cook is a one-day workshop, which will take place on 21 May 2012 for eight hours; starting from 8:30am to 5:30 pm. The Trade Test will consist of a two-hour written test to be held on 22 June 2012 and a six hour practical test in early August 2012.
The course fee is HK$ 4,140.00

Preparatory Course and Trade Test for Trainer Chef:
The Preparatory Course for Trainer Chef will commence on 5 January 2012 and will continue until 21 June 2012. Classes will be held every Thursday afternoon from 2:30 pm to 6:30 pm. The duration of the course is 96 hours. A three-hour written test will be held on 30 June 2012 whereby a thirty-minute trade test (oral examination) will take place in August 2012. The course fee is HK$ 8,800.00
