 Features Talented Top Chefs with Unlimited Creativity

Some of Hong Kong’s most talented chefs met in the Hospitality Industry Training & Development Centre of the Vocational Training Council today to take part in the California Strawberry Recipe Contest organized by the California Strawberry Commission (CSC).

The CSC is dedicated in promoting the nutritious values and taste of California Strawberries worldwide. The Contest is aimed at promoting the creative use of California Strawberries in restaurants and at homes. The contest comes in two sections with the Professional Chefs taking part in the Modern Chinese Cuisine Challenge Practical Hot Cooking (Poultry) and Western Cuisine Practical Hot Cooking (Seafood) Sections. Contestants have to prepare and present their dishes with California Strawberries and the designated cooking ingredients.

The contest has attracted high participation and media attention this year. Contestants, with many of them coming from famous restaurants in Hong Kong, have designed their original recipes enriched with ‘THE RED EDGE’. The organizer has invited top Chinese and Western chefs in the culinary community as adjudicators. The 10- member adjudication panel included: Mr Leung Fai Hung, Chinese Head Chef, InterContinental Grand Stanford Hong Kong; Mr Robert Tam, Executive Chef - Chinese, Hong Kong Cricket Club; Mr Lau Chi Kit, Chinese Executive Chef, Habour Plaza North Point; Mr Mango Tsang, Chinese Executive Chef, The Ritz-Carlton Hong Kong; Mr Dicky To, Executive Chinese Chef, Royal Plaza Hotel; Mr. Angelo McDonnell, Group Executive Chef, Igors Group; Mr. Hans R Nussbaumer, Chief Instructor (Food Preparation-Western), Hospitality Industry Training and Development Centre; Mr. Dominique GrandJean, Manager – Western Cuisine Trade Test, Hospitality Industry Training and Development Centre; Mr. Perry Yuen, Food & Beverage Manager– Operations, Hong Kong Convention and Exhibition Centre; Mr. Angus Cheng, Senior Sous Chef, Wynn Hotel and Casino.

The adjudicators were impressed by the skills and talents of the contestants. The panel gave positive comments to the entries, complimenting their creativity and skills which highlight the uniqueness of California Strawberries in cooking. Adjudicators had the Winner, the 1st Runner-up & the 2nd Runner-up for each section based on their creative use of California Strawberries; cooking techniques; presentation and taste. Winners received travel cash vouchers (Worth of $8,000, $5,000 and $3,000 respectively) as prizes.

Supporting organizations of the contest include the Hong Kong Chefs Association; Hong Kong Chinese Chefs Association and the United States Department of Agriculture.

California Strawberries are widely considered as the ‘Super nutritious fruit’ with its excellent source of antioxidants including Vitamin C, and high levels of potassium, folate and fiber. Latest nutrition research also indicated that eating eight California Strawberries a day may reduce the risk of heart disease and some cancers and improve a person’s memory. . Strawberries have the most Vitamin C and the lowest sugar content over the other four popular fruits – apple, banana, grape, and orange. For chefs and housewives alike, the mix and match of California Strawberries with other cooking ingredients can create numerous nutritious and delicious dishes.

 

The California Strawberry Commission

The California Strawberry Commission (CSC) was formed by legislation and a referendum of farmers and handlers in 1993. It represents an industry of approximately 510 strawberry growers, 75 shippers & processors. The Commission strives to provide comprehensive technical support to farmers in the industry to accelerate the agricultural development in California as well as its promotion in both the local and overseas markets.

CSC activities fall into 4 major areas: overseeing and conducting production research and information programs; representing the industry at federal, state and local government levels; promoting trade relations (Retail & Foodservice) & promoting California strawberries through marketing programs and industry’s programs & practices.

The California Strawberry Scholarship Program was implemented in 1994 to recognize the contributions of farm workers made to the industry by granting scholarships to their children.
